TaSty TueSday!

I love to cook!
but oh, sometimes I run out of ideas!

so....

A fun... experimental, and possibly daunting New Years Resolution is to slowly start thumbing through all the cookbooks that I have gathered over the years, and sworn to cook out of- and start cooking!

I do trail- and bring to you ...

(hopefully not error) The yummy outcome... on Tuesday's ...

Creamy Chipotle Pork Chops with Wild Rice

I like this one because it is easy, delicious and quick.

You will need:

1 T olive oil
4 pork chops (the thin boneless ones cook faster, but you can use bone-in ones as well.)
1 lrg yellow onion (cut into wedges)
1 T McCormick Chipotle Marinade Pack (this is near the taco seasonings, you can also use chipotle spices)
1/2 t salt
1 C heavy cream
2 T fresh cilantro, minced (this is not that strong- so if you hat cilantro still add a bit, it makes it great)
1-2 cups mushrooms (I like baby portabello's, but any will do!)

Cook chops first in oil and chipotle seasoning- then set them aside on a plate. Then cook onion, in the same pan. When onions are almost translucent, add mushrooms and saute. In same pan add remaining ingredients, scraping the bottom of the pan to get all the goodness up. Heat and then add chops back into sauce. Salt and Pepper to taste. (it is optional to add spinach into the pan)

I love this on wild rice which can be purchased at any local grocer, and if you do not want to add the spinach to the chop mixture- a spinach salad is great on the side or also fresh roasted green beans- toss them in olive oil, salt pepper and red pepper flakes for a zing and bake on 375 for- uh, I dont know 15-20 mintutes...

Team in Training

So my cousin Kevin asked if I would like to run the Moab 1/2 marathon with him.... Knowing that I needed some extra motivation for my New Year workout regimen, I accepted.... and convinced Lyle that it is something that he should do as well.. So, training has started and boy did I forget.....

what a task it is to train for something... How much time it takes.. and how much dedication.

Today we ran 5- during the run I wondered.... HOW the HELL did I ever run a marathon? but that is the exciting thing... you start small, dedicate and in the end you run the race.
I am excited that so many of my friends will be there to run it as well... Kate, Boonie and Carl, Kev and Cea... Can't wait..
